SPICY MANGO
MARGARITA.
SWEET MANGO. SHARP LIME. CONTROLLED CHAOS.
Ripe mango, tequila, fresh lime and a little H-06 LIFTOFF.
Fruity and refreshing first, with the heat building underneath.
Start mild and decide how far you want to take it.
Ingredients.
- 45 ml blanco tequila
- 60 g ripe mango, fresh or thawed frozen mango
- 25 ml fresh lime juice
- 20 ml orange liqueur
- 5–10 ml agave syrup, to taste
- ¼ tsp H-06 LIFTOFF, plus more to taste
- Ice
- Chilli salt or Tajín-style seasoning
- Lime wedge
- Fresh lime wheel or wedge
- Small mango slice, optional
Method.

Prep the glass.
Run a lime wedge around the rim of a margarita or rocks glass and dip lightly into chilli salt.

Blend the mango.
Add the mango, tequila, lime juice, orange liqueur, agave and ¼ teaspoon H-06 LIFTOFF to a blender.

Make it smooth.
Blend until the mango is completely smooth. If using a cocktail shaker instead, puree the mango first, then shake everything with ice.

Taste before committing.
Taste the mixture before adding more H-06. The mango softens the heat, but ghost pepper still knows what it's doing.

Serve.
Pour over fresh ice, or blend with ice for a frozen version. Garnish with lime and mango if using.
Adjust accordingly.
Mild
Start with just a few drops of H-06. Mango and lime still give the drink plenty of flavour.
Hotter
Increase H-06 gradually until the heat sits where you want it. There is no need to prove anything.
Frozen
Blend everything with a generous handful of ice for a thick frozen mango margarita.
Alcohol free
Leave out the tequila and orange liqueur and add a splash of orange juice or soda water instead.

the heat.
Sweet mango and sharp lime are naturally good partners for chilli. H-06 LIFTOFF adds garlic and ghost pepper heat underneath the fruit without needing sliced chillies or chilli syrup.
Because H-06 is 8/10 heat, start small. A few drops gives you a gentle kick; a little more takes the drink somewhere considerably less responsible.
