WHY IT WORKS

Fried chicken naturally loves heat. The combination of crispy coating, juicy chicken, creamy slaw and spicy sauce creates the perfect balance of texture and flavour. H-06 LIFTOFF brings sharp garlic flavour and aggressive ghost pepper heat.

Recommended: Chicken Thigh Fillets. Juicier, more forgiving, more flavour than breast.

INGREDIENTS

Chicken

  • 4 chicken thigh fillets
  • 250mL buttermilk

Coating

  • 1 cup plain flour
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp sea salt

Sauce

  • 3 tbsp mayonnaise
  • 2 tbsp H-06 LIFTOFF

Burger Build

  • 4 brioche buns
  • Slaw
  • Sliced pickles

EQUIPMENT

  • Frying pan or deep fryer
  • Mixing bowls
  • Tongs

METHOD

1. Marinate chicken

Coat chicken in buttermilk. Rest for at least 30 minutes.

2. Prepare coating

Combine flour, smoked paprika, garlic powder and salt.

3. Coat chicken

Remove chicken from buttermilk. Coat generously in flour mixture. Press coating firmly onto chicken.

4. Fry chicken

Heat oil to 180°C. Cook 4–5 minutes per side until golden and cooked through. Internal temp: 75°C.

5. Prepare sauce

Mix mayonnaise and H-06 LIFTOFF.

6. Toast buns

Lightly toast brioche buns.

7. Build burger

Layer sauce, fried chicken, slaw and pickles. Serve immediately.

  • Don't overcrowd pan
  • Rest chicken briefly after frying
  • Build burgers just before serving
