GARLIC GHOST
LOADED FRIES.
Crispy fries layered with melted cheese, smoky bacon, spring onion, sour cream and H-06 LIFTOFF. Loud, messy and absolutely not side-dish behaviour.
HOW TO MAKE IT
METHOD.
PREHEAT THE OVEN.
Preheat the oven to 220°C. Line a large baking tray with baking paper. Use two trays if needed so the fries are not overcrowded.
SEASON THE FRIES.
Toss the fries with oil, garlic powder, smoked paprika, sea salt and black pepper. Spread them into a single even layer.
BAKE UNTIL CRISP.
Bake according to the packet instructions, turning halfway through. Continue cooking until deeply golden and properly crisp, usually around 25–30 minutes.
COOK THE BACON.
While the fries cook, place the diced bacon in a frying pan over medium heat. Cook until crisp, then transfer to paper towel to remove excess fat.
MAKE THE SAUCE.
Mix the mayonnaise, H-06 LIFTOFF, sour cream and lime juice until smooth. Add another spoonful of H-06 if you want the sauce hotter.
BUILD THE FIRST LAYER.
Transfer half the fries to a large oven-safe serving tray. Add half the cheddar, mozzarella, bacon and jalapeños.
LOAD THEM AGAIN.
Add the remaining fries followed by the remaining cheese, bacon and jalapeños. Return the tray to the oven for 5–7 minutes until the cheese is completely melted.
FINISH AND SERVE.
Drizzle over the garlic ghost sauce and sour cream. Finish with spring onion, coriander, black pepper and a generous extra drizzle of H-06 LIFTOFF. Serve immediately.
HARRY'S TIP
BUILD THEM IN LAYERS.
Do not put every topping on the surface. Layer the fries, cheese and bacon twice so the bottom half does not exist purely to hold up the good bits.
