WHY IT WORKS

A great burger needs balance: fat, salt, acidity, richness, heat. Wagyu delivers richness and flavour. H-01 STANDBY cuts through that richness with smoky chipotle heat and barbecue depth, bringing everything together.

BEST BEEF

Recommended: Wagyu Beef Mince. Better fat content, richer flavour, juicier patties. Look for a 75/25 or 80/20 lean-to-fat ratio. Good quality regular beef mince also works well as an alternative.

INGREDIENTS

Patties

  • 800g Wagyu beef mince
  • 1 tsp sea salt
  • 1 tsp cracked black pepper

Divide into 4 x 200g patties.

Burger Sauce

  • 3 tbsp mayonnaise
  • 2 tbsp H-01 STANDBY
  • 1 tsp American mustard
  • 1 tsp pickle juice

Burger Build

  • 4 brioche buns
  • 4 slices American cheddar
  • 1 brown onion, sliced
  • 2 tbsp butter
  • Sliced pickles
  • Lettuce (optional)

EQUIPMENT

  • BBQ, hotplate or frying pan
  • Spatula
  • Mixing bowl

METHOD

1. Make patties

Divide mince into 4 equal portions. Shape gently into patties — avoid overworking the meat. Season both sides with salt and pepper.

2. Caramelise onions

Heat butter in pan over medium heat. Cook sliced onions for 12–15 minutes until soft, golden and caramelised. Set aside.

3. Prepare sauce

Mix mayonnaise, H-01 STANDBY, mustard and pickle juice. Set aside.

4. Cook patties

Heat BBQ, hotplate or pan over high heat. Cook patties for 3–4 minutes per side, flipping once. Add cheese during the final minute. Target medium to medium-well.

5. Toast buns

Lightly toast brioche buns cut-side down until golden. Small step, big difference.

6. Build burger

Layer burger sauce, patty, melted cheese, caramelised onion, pickles and extra H-01 if desired. Top with bun. Serve immediately.

  • Don't overwork the mince — keeps patties tender

  • Rest briefly before building to retain juices

SERVING SUGGESTIONS
