CHIPOTLE BBQ
CHICKEN WINGS.
Crispy chicken wings coated in a sticky chipotle barbecue glaze made with H-01 STANDBY. Smoky, sweet, caramelised and built for eating with your hands.
HOW TO MAKE IT
METHOD.
PREP THE WINGS.
Pat the chicken wings completely dry with paper towel. Removing excess moisture helps the skin become properly crisp.
SEASON.
Place the wings in a large bowl. Add the olive oil, baking powder, smoked paprika, garlic powder, onion powder, salt and pepper. Toss until every wing is evenly coated.
BAKE UNTIL CRISP.
Arrange the wings in a single layer on a wire rack set over a lined baking tray. Bake at 220°C for 40–45 minutes, turning halfway, until deeply golden and crisp.
BUILD THE GLAZE.
Add H-01 STANDBY, honey, brown sugar, apple cider vinegar, butter and Worcestershire sauce to a small saucepan.
MAKE IT STICKY.
Place the saucepan over medium heat. Stir until the butter melts, then simmer gently for 3–4 minutes until the glaze becomes glossy and slightly thickened.
GLAZE THE WINGS.
Transfer the cooked wings to a large bowl. Pour over the warm chipotle barbecue glaze and toss thoroughly until every wing is lacquered and glossy.
CARAMELISE.
Return the glazed wings to the tray and bake for another 5 minutes. For darker edges, finish them briefly beneath a hot grill while watching closely.
SERVE.
Rest for two minutes before serving. Finish with chopped parsley or spring onion and serve with ranch or blue-cheese dressing.
HARRY'S TIP
DRY WINGS WIN.
Moisture is the enemy of crisp chicken skin. Pat the wings thoroughly dry before seasoning and leave space between them on the rack. Crowded wings steam. Nobody came here for steamed wings.
